Hi all! I've had soooo much going on here lately! I've been working on a new blog. A Recipe Share :-)

I'm not a very experienced cook, that I will freely admit. BUT, I do have one original recipe that I love to make. Its my meatloaf. Yes, I know meatloaf brings back scary memories of the lunch lady slopping a wad of "beef" onto your school lunch tray. But my meatloaf is different! Its actually good!! lol

Mama's Mini Meatloaves

3 lbs ground beef

1/4 cup brown sugar

1 egg

1 cup ketchup

1 cup french's french fried onions

1 sleeve of saltine crackers

Combine all ingredients in a large mixing bowl. Then spoon mixture into muffin tins. Bake at 350 for about 50 minutes or until the center is no longer pink. Then make an easy sauce to go on top by combining 3/4 cup of ketchup and 2 tbsp brown sugar in a bowl and microwaving for 1 minute. Pour this on top of the mini meatloaves then bake another 10 minutes. My kids love having their own individual meatloaves for dinner.

This is my fave recipe by far. SO I entered it in French's 2009 Cookoff. Do you have a favorite recipe you'd like to share?
